Well Hello, friend! ‘Tis I, Sara! As fall has taken a sharp turn towards winter here in Colorado (we got about 8 inches of snow over the weekend), now is the perfect time for a nice warm breakfast!
This is actually a breakfast that my husband and I have 2 days per week and never get tired of it. We’ve been eating this for over a year in this way. The fruit can be berries, peaches, apples, plums, pears, mango, I haven’t tasted a fruit I didn’t like in this!
It is super easy to make in the microwave, and comes together in a pinch! Perfect for rushed mornings getting the kids off to school with a full belly of healthy fiber and fruit!
Health Benefits of Oat Bran:
If you’ve never had oat bran before, you are in for a treat! Oat Bran is the outer casing of the oat grain. It contains fewer carbohydrates than oatmeal, and also packs about 50% more dietary fiber and protein to boot! The fiber oat bran contains naturally absorbs water, and thus makes you feel full longer.
Studies show that eating oats can improve digestion, and lower LDL cholesterol levels (this is the “bad” cholesterol). Just one serving of oat bran has enough soluble fiber in it to accomplish this!
No Added or Artificial Sweeteners!
The mashed banana is used to naturally sweeten this breakfast and has the added benefit of all the fiber it contains. If you don’t like mashed banana you could use date paste to sweeten this, and this is just as tasty!
Okay, are you ready now to supercharge your morning?
Fruity Breakfast Oat Bran
⅓ cup oat bran
2 TBSP Hemp Seeds
2 TBSP Ground Flaxseed
1 tsp ground cinnamon
1 cup water
1 banana (mashed)
½ tsp Lemon extract
½ pint raspberries or other fruit fresh or frozen
Combine the oat bran, hemp seeds, flax seeds, cinnamon, and water.
Microwave on high for 2 mins 15 seconds (cooking times will vary, keep your eye on it and be sure it does not boil over).
While this is microwaving, peel and mash your banana. The banana is what gives the oat bran a sweet taste without the need for adding any artificial sweeteners.
Stir the mashed banana and lemon extract into your bowl with the heated oat bran mixture.
Finally, top with berries or any other fruit you prefer and enjoy!
I hope you will give this breakfast a try. It packs a punch of Vitamin C, fiber, as well as protein. It keeps me full right up to lunch which is uncommon, as I seem to be hungry otherwise. If you do try it, please let me know what you think!
