Hello- I’m Sara. A Registered Nurse by day, specializing in Cardiac nursing for the past 13 years.
This has made me all too aware that heart disease is truly a food-based illness. I’ve earned the Plant-Based Nutrition Certification from the T. Colin Campbell Center for Nutrition Studies and eCornell. Meaning, I have an extensive understanding of the health effects which the Standard American Diet has, and the benefits a whole food, plant based diet offers, including reducing risk of many chronic health conditions.
Being an example for my patients is important to me, so they can see it is possible, and easier than they would think to live their happiest life. I want to encourage those who wish to avoid being chronically ill in their golden years to fall in love with healthful habits to prevent this. Hopefully sharing my journey can encourage others to be the healthiest versions of themselves, and pack more life into their years. I invite you all to join us on this journey, and hope you stop by often to our little corner of the internet!
I am Sara’s mother, Patricia. Retired for the most part from the scrum of life outside the home. Last year, I experienced a couple of minor(now) health scares that turned out to be nothing at all. From day to day, I struggle with life with hypothyroidism. And then in the beginning of last year, I had a major setback in my personal war against arthritis.
That combined with changes I was making in my life before any of that started
ultimately led to my decision to go plant-based. I had been mostly vegetarian
for several months and began toying with the idea of becoming fully vegan after
some reading and seeing increasingly more references to this diet in the news,
and tons of tips and recipes online.
When Sara and her husband decided they were going vegan, it seemed like a lightbulb moment. Why not make the change myself, availing myself of the knowledge that Sara had already acquired? Hopefully, it was going to be easier if I had some backup. For me, health is my priority with ethical and environmental concerns sharing second place in my concerns. So far, I have done pretty well, but sometimes there have been circumstances that interfered with my goals. I’m really close, that is what is important.
Have you ever marveled at how quickly time flies past, the seasons melting into each other as they appear and then fade away? Sometimes at the speed of light! Those of us located on the further end of our personal timeline have noticed long ago how the seasons have increased their pace, marching with a rhythm and a certain resolve.
But that’s OK, since we, ourselves share that same resolve, as we travel through the seasons of our own lives. We, too, have our own pace, and hopefully, dance to our own tune along the way.
Looking ahead, are there tweaks to be made in each day? Of course. What changes can we enact that will enhance our health and happiness? And yes, each of us will march to our own personal rhythm and we will have ups and downs. But we are in pursuit of a better us. Mind, body, world.

What were the things you struggled with or perhaps still struggle with? For me, there are certain restrictions diet-wise that can be frustrating.
Plus, there are things I simply do not like or ingredients that seem out of place in a vegan diet. What is it that keeps your eye on the goal? What motivates or inspires you? We want to hear from you, maybe we will have a suggestion or even better perhaps you will have an answer to a question we may have. By which I mean me, since Sara is further ahead in her veganism.
